Water temp is a good one, Fuel pressure for sure!!! The fuel level is just an extra one for the big tank in back... Hell I might just mount it where the shift on the fly would be...

14, but they are all dual head, so I only have 7 pods. 4 on the pillar and 3 on the dash. But thinking of adding a couple more - or a data logger - like 24 channel.
