Did you replace the thermostat when you put your engine back together? I'm in cooler temps so I use a 203* thermostat sold by Dieselsite. The Ford factory thermostat is a 195* unit. 223* is not unreasonable IMO given the location. As trashed as your truck was though I'd keep an eye on it (if memory serves.. you didn't replace the radiator).
I do not believe I have a problem with my thermostat, but I did wonder about the temperature.
I will look for a cooler thermostat for the future. The one I have is a 203° tstate.

At those temps I'm not sure a cooler thermostat will change much. At 223* the thermostat will be wide open anyway. Keep an eye on it as you break your rebuilt motor in.
