My truck is a 2006 f250 with a auto tranny two days ago I was replacing the fuel pressure regular and broke the engine coolant sensor. So my gauge reeds zero temp right now. my fan after five minutes of driving kicks on. My sct scanner showes normal temp driving maybe a bit cold around 175 to 180 but my clutch fan is always on is it possible I broke something else when I was in there

What is your oil temp?

If you broke your coolant sensor (and it is still broken) then the number that the SCT reports is not correct (unless you replaced it and you didn't include that in your original post).

The gauge sounds bad. Maybe a weak thermostat. Maybe even a fan clutch issue. Get it scanned for codes with a good scan tool.
