6.0's RPM increases in steps, no codes

I have owned my first 6.0 for 7 months now, it's a '05. So far I have put a new high pressure oil pump, new fuel injector (injector #4), new ficm, new fuel pump and filters, new vacuum pump, 2 new batteries and new serpentine belt along with the pulley/tensioner. Have done all work myself along with my old mechanic. I love my truck but it is still doing a RPM stepping type acceleration... Not throwing any codes though, only thing I can figure is it might be a sensor going bad or it could use an oil change. Like I said my first diesel and my first day as a member, thanks guys any help or advice on the truck or where I should be posting is much appreciated! Thinking about straight pipeing or straight pipe to a single stack.. Any input?
