How do you determine proper stall speed

Getting a new 7.3 installed and decided to upgrade my torque convertor. I use the truck strictly for towing. I'm guessing 400hp/ 825 ft.lbs based on earlier dyno runs before upgrades. Who knows how to calculate proper stall speed for this application? I called around and have gotten different info from tc builders. Have tried Precision Industries Stallion,Suncoast and ATS. I'm running 3.55 gears on 285/75/16 tires.
