Fan oil, temps

Is there a way to put a lock up swith on my fan, pulling around 7-10k inclosed trailer in 85-110* weather my water temps will run 205-230 and oil 210-240, which as the temps go up it turns the AC down and off, which sucks, my fan won't turn on full till 220, which at that point the AC is turning down. In 95-100* weather I was running a low of 210 water and 220 oil, and I would say about 50-75% AC power, hitting hills would turn my AC off.
What temps should the AC be turn off at? It is chipped running a town tune.

2006 CCLB 4x4 King Ranch 2"lift 35's, S&B, sct tunes by Innovative, Quick Tricks, Powermax, 6.4 Banjo bolts, coolant filter, edge insight, 4" turbo back.

Can't the fan parameters be changed in sct? Maybe a tow tune could be written for you.
