A 255/85/16 will get you the hight if that is what you are after, and will not rub when loaded down. There are a few inexpensive AT type tires out there.
+2 for the 255/85R16's. I have the Toyo LT 255/85R16 M-55's on my truck and they have been great. Just went through a ice storm and several snow showers here in Co Springs and they gripped great. I've had 3K in the bed and close to 2K on the hitch and they don't even squat when aired to 80. No issue at all with sidewall clearance. They are going to have a much better weight capacity than the 245's and with the height they look awesome! Was looking at the BFG KM2's but went with the Toyo's because of the fact that they do much better in the snow and ice and are still really aggressive and do great off road and in the mud. They are used a ton by the logging and rail industries and are about as tough as nails.....

I ran 265's for a long time, no rubbing. Hauled pretty good sized loads with no rubbing and no problems. 285's there is no clearance at all, but 265 you should be ok. Different brand of tire might be a little different, but at most I'd say a 1/4 spacer might be needed. May dpend on the wheel too. The factory aluminum rears seem to have more room between than the steel ones. Mine are the stock steel inner/ alum outer.
I run 265's with no problems on my dually. I haul a bunch of heavy stuff too.
